Ingredients:
1/2 cup (1 stick) unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1/2 cup hot water
Ganache Topping:
1 cup semi-sweet chocolate chips
1/2 cup heavy cream
Optional Garnish: Fresh raspberries and powdered sugar
Instructions:
1️⃣ Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
2️⃣ In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
3️⃣ In a separate bowl, sift together flour, cocoa powder, baking soda, and salt. Gradually add to the wet ingredients, alternating with buttermilk. Stir in hot water until just combined.
4️⃣ Pour batter into prepared pan and bake for 50-60 minutes, or until a toothpick comes out clean. Cool completely.
5️⃣ To make the ganache, heat heavy cream until just simmering. Pour over chocolate chips and let sit for 2 minutes before whisking until smooth.
6️⃣ Spread ganache over the cooled cake, then garnish with fresh raspberries and a dusting of powdered sugar.
