Spinach and Cheese Stuffed Chicken Roll-Ups Recipe
Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts
1/2 cup shredded mozzarella or provolone cheese
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 tsp Italian seasoning
Salt and black pepper to taste
For the Coating:
1/2 cup breadcrumbs
2 tbsp grated Parmesan cheese
1 tsp garlic powder
1 tbsp olive oil
For the Sauce (Optional):
2 tbsp butter
2 cloves garlic, minced
1/2 cup chicken broth
1/4 cup dry white wine (optional)
1 tbsp lemon juice
Fresh parsley for garnish
Instructions:
Prepare the Chicken:
Preheat your oven to 375°F (190°C).
Butterfly the chicken breasts by slicing them horizontally without cutting all the way through. Flatten with a meat mallet to even thickness.
Make the Filling:
In a bowl, combine sautéed spinach, shredded mozzarella, Parmesan cheese, minced garlic, and Italian seasoning. Season with salt and pepper.
Stuff the Chicken:
Spread the filling evenly onto each chicken breast. Roll each piece tightly and secure with toothpicks.
Coat the Chicken:
In a shallow bowl, mix breadcrumbs, Parmesan cheese, and garlic powder. Lightly brush the chicken roll-ups with olive oil, then coat them in the breadcrumb mixture.
Bake the Chicken:
Place the chicken roll-ups in a greased baking dish. Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
Prepare the Sauce (Optional):
While the chicken bakes, melt butter in a skillet over medium heat. Add minced garlic and sauté for 1 minute. Stir in chicken broth, white wine (if using), and lemon juice. Simmer for 3-4 minutes until slightly reduced.
Serve:
Slice the chicken roll-ups into medallions and drizzle with the sauce. Garnish with fresh parsley and serve with your favorite sides like roasted vegetables or mashed potatoes. Enjoy!
