Ingredients:
1 1/2 lbs ground chicken
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs (preferably Italian style)
1/4 cup milk
2 cloves garlic, minced
1/4 cup finely chopped onion
1 large egg
2 tbsp fresh parsley, chopped (plus extra for garnish)
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp crushed red pepper flakes (optional)
1/4 cup grated mozzarella cheese (optional, for topping)
2 tbsp olive oil (for drizzling)
Preparation:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease or line a loaf pan with parchment paper for easy cleanup.
Mix the Meatloaf:
In a large bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, milk, minced garlic, chopped onion, egg, fresh parsley, oregano, salt, pepper, and crushed red pepper flakes (if using). Mix well until all ingredients are evenly incorporated.
Form the Meatloaf:
Transfer the meat mixture to the prepared loaf pan, pressing it down gently to shape it into a loaf.
Bake:
