Experience a sweet twist on a classic treat that’s perfect for sharing! These delightful moon pies will transport you to dessert heaven with every bite!

Ingredients:

– 6 ounces white chocolate chips

– 24 Ritz crackers

– 1/2 cup marshmallow fluff

– 1/2 teaspoon vanilla extract

– 4 tablespoons unsalted butter, softened

– 1/2 cup confectioners sugar

– Himalayan pink salt or flaky sea salt, optional

Instructions:

1. Start by preparing your workspace: line a baking sheet with parchment paper. Position 12 Ritz crackers face down on the sheet to create the base of your moon pies.

2. In a mixing bowl, combine the softened unsalted butter, confectioners sugar, marshmallow fluff, and vanilla extract. Beat the mixture together with an electric mixer on medium speed until it becomes light and fluffy, usually about 2-3 minutes.

3. Once your filling is ready, transfer it into a piping bag or a ziplock bag. If using a ziplock bag, snip off one corner to create a piping tip. Pipe a generous dollop of the fluffy filling onto the crackers on the baking sheet, then gently place the remaining crackers on top to form sandwiches.

4. Place the assembled sandwiches in the refrigerator and chill them for at least 2 hours to help them set.

5. When ready to coat, melt the white chocolate chips in a heatproof bowl set over a pan of barely simmering water. Stir occasionally until the chocolate is smooth and completely melted.

6. Carefully dip each chilled sandwich in the melted white chocolate, using a fork to help you. Allow excess chocolate to drip off by gently tapping the fork against the edge of the bowl. Once coated, place the sandwiches back on the parchment-lined baking sheet.

7. If you wish, sprinkle a little Himalayan pink salt or flaky sea salt over the chocolate-coated sandwiches for a touch of contrast. Repeat this step until all sandwiches are dipped.

8. Chill the coated moon pies in the refrigerator for an additional 30 minutes until the chocolate is fully set. Once firm, store your moon pies in an airtight container in the fridge until you’re ready to enjoy them!
