Grilled Ribeye Steak with Garlic Herb Butter

Ingredients
For the Steak
2 ribeye steaks (1-inch thick)
2 tbsp olive oil
Salt and freshly ground black pepper
For the Garlic Herb Butter
4 tbsp butter, softened
2 garlic cloves, minced
1 tbsp fresh parsley, chopped
1/2 tsp red chili flakes (optional)
For the Sides
2 ears of corn on the cob
1 lb baby potatoes, halved
1 tbsp olive oil
Salt and pepper
Instructions
Prepare Garlic Herb Butter
In a bowl, mix butter, garlic, parsley, and chili flakes. Set aside.
Grill the Corn and Potatoes
Brush corn and potatoes with olive oil, salt, and pepper.
Roast the potatoes in the oven at 400Β°F (200Β°C) for 25 minutes.
Grill corn on medium heat for 10 minutes, turning occasionally.
Cook the Steak
Season the steaks generously with salt, pepper, and olive oil.
Grill on high heat for 4-5 minutes per side for medium-rare. Adjust to your liking.
Top with Butter
Rest the steaks for 5 minutes. Top with garlic herb butter and let it melt.
Serve Hot
Plate the steaks with roasted potatoes and charred corn. Garnish with parsley.
