Ingredients
- • 6 pork sausages (Irish-style or bratwurst)
- • 1 tbsp olive oil
- • 1 onion, sliced
- • 3 cloves garlic, minced
- • 3 carrots, cut into large chunks
- • 3 cups green cabbage, chopped
- • 3 cups beef or chicken broth
- • ½ cup dark beer (optional, adds depth of flavor)
- • 1 tbsp Worcestershire sauce
- • ½ tsp salt
- • ½ tsp black pepper
- • ½ tsp dried thyme
- • 2 bay leaves
Instructions
- • In a large pot or Dutch oven, heat olive oil over medium heat. Brown the sausages on all sides, about 5–6 minutes. Remove and set aside.
- • In the same pot, sauté the sliced onions for 2–3 minutes until soft. Add garlic and cook for another 30 seconds.
- • Add carrots and chopped cabbage. Stir well and cook for 3–4 minutes to slightly soften.
- • Pour in broth, dark beer (if using), and Worcestershire sauce. Season with salt, pepper, thyme, and add bay leaves.
- • Return sausages to the pot. Bring stew to a simmer. Cover and cook for 30–35 minutes, until veggies are tender and sausages are cooked through.
- • Discard bay leaves before serving. Ladle into bowls and serve with crusty bread or mashed potatoes.
