ZESTY LEMON GARLIC PASTA

INGREDIENTS:
8 oz fettuccine or your favorite pasta
5 cloves garlic, minced
1 teaspoon crushed red pepper flakes (adjust to taste)
1 can (14 oz) artichoke hearts, drained and quartered
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried thyme
1 lemon, zested and juiced
1/4 cup fresh parsley, chopped (plus more for garnish)
1/2 cup grated Pecorino Romano cheese (for serving)
INSTRUCTIONS:
STEP 1: COOK THE PASTA
– Boil Water: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
STEP 2: MAKE THE SAUCE
– Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and crushed red pepper flakes, cooking for about 1 minute until fragrant.
– Add Artichokes: Stir in the quartered artichoke hearts, seasoning with salt, black pepper, and thyme. Cook for an additional 3-4 minutes until heated through.
STEP 3: COMBINE PASTA AND SAUCE
– Toss Together: Add the cooked fettuccine to the skillet with the artichoke mixture. Pour in the lemon juice and zest, tossing to combine. Add reserved pasta water a little at a time until the desired consistency is reached.
– Finish with Parsley: Stir in the fresh parsley and mix well.
STEP 4: SERVE
– Plate and Garnish: Serve the zesty lemon garlic pasta hot, topped with grated Pecorino Romano cheese and additional parsley for garnish.
