Mexican White Trash Casserole Recipe

✅Ingredients:

3 cups cooked, shredded chicken (rotisserie works well)

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 can (10 oz) Rotel (diced tomatoes with green chilies), drained

1 ½ cups shredded Mexican blend cheese (or cheddar)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

½ teaspoon chili powder

1 bag (10 oz) Doritos, crushed (Nacho Cheese or Cool Ranch flavor)

½ cup milk

2 tablespoons butter, melted

Optional: chopped cilantro, jalapeños, or diced green onions for garnish

✅Instructions:

1. Preheat the Oven

Set your oven to 350°F (175°C) and grease a 9×13-inch baking dish.

2. Prepare the Filling

In a large bowl, mix together the shredded chicken, cream of chicken soup, sour cream, drained Rotel, milk, melted butter, and all the seasonings (garlic powder, onion powder, cumin, and chili powder). Stir until well combined.

3. Layer the Casserole

Spread half of the crushed Doritos evenly on the bottom of the greased baking dish.

Pour the chicken mixture on top of the chips and spread it out evenly.

Sprinkle 1 cup of shredded cheese over the chicken mixture.

Top with the remaining crushed Doritos and then the rest of the cheese.

4. Bake

Cover with foil and bake for 20 minutes.

Remove the foil and bake for another 10-15 minutes until the cheese is bubbly and melted.

5. Garnish and Serve

Let the casserole cool for a few minutes.

Garnish with chopped cilantro, diced green onions, or sliced jalapeños if desired.

Serving Suggestions:

Serve hot with a side of Mexican rice, refried beans, or a fresh salad.

Add salsa, guacamole, or sour cream on the side for extra flavor.
