Raspberry Panna Cotta Recipe
A creamy and velvety panna cotta topped with a luscious raspberry sauce and garnished with fresh raspberries. Perfect for a sophisticated dessert.
Ingredients
For the Panna Cotta:
½ cup whole milk
½ cup granulated sugar
1 teaspoon vanilla extract
1 packet (2 ¼ tsp) unflavored gelatin
3 tablespoons water
For the Raspberry Sauce:
1 cup fresh or frozen raspberries
¼ cup granulated sugar
1 tablespoon lemon juice
1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)
For Garnish:
Fresh raspberries
Powdered sugar
Mint leaves
Instructions
Step 1: Prepare the Panna Cotta
In a small bowl, sprinkle the gelatin over 3 tablespoons of water. Let it bloom for 5 minutes.
In a medium saucepan, combine heavy cream, milk, and sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved (do not let it boil).
Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved.
Add vanilla extract and mix well.
Strain the mixture through a fine sieve to remove any lumps and pour it into lightly greased ramekins or silicone molds.
Cover and refrigerate for at least 4 hours or until set.
Step 2: Make the Raspberry Sauce
In a small saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the raspberries break down and the mixture becomes syrupy.
For a thicker sauce, stir in the cornstarch slurry and cook for another 1-2 minutes.
Remove from heat and strain the sauce through a fine sieve to remove seeds (optional). Let it cool completely.
Step 3: Assemble and Garnish
Once the panna cotta is set, run a knife around the edges and gently unmold onto dessert plates.
Drizzle the raspberry sauce over the panna cotta.
Garnish with fresh raspberries, a sprinkle of powdered sugar, and mint leaves.
Tips3
For a more indulgent flavor, substitute half of the milk with coconut milk.
You can prepare the panna cotta a day in advance and store it covered in the refrigerator.
