Ingredients:

1 lb large sea scallops

2 tbsp unsalted butter

2 tbsp olive oil

3 cloves garlic, minced

1/4 cup dry white wine (optional)

1 tbsp fresh lemon juice

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions:

Prepare the Scallops: Begin by patting the scallops dry using paper towels to eliminate excess moisture, ensuring a perfect sear. Season both sides generously with salt and pepper.

Heat the Pan: In a large skillet, pour in the olive oil and heat it over medium-high. Once the oil is shimmering, carefully place the scallops in the skillet, ensuring there is space between each one. Let them sear undisturbed for 2-3 minutes.

Flip and Sear: After the first side has a beautiful golden brown crust, flip each scallop over and continue to sear for another 2-3 minutes until they are opaque and cooked through. Remove the scallops from the skillet and set them aside.
