FLAVORFUL HERB CRUSTED TOFU PAIRED WITH BRIGHT LEMON GARLIC SAUCE
Ingredients:
For the herb-crusted tofu:
– 1 block extra-firm tofu, pressed and drained
– 1 tablespoon soy sauce
– 1 teaspoon garlic powder
– 1 teaspoon dried basil
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– Salt and pepper to taste
For the lemon-garlic sauce:
– 1/4 cup olive oil
– 3 cloves garlic, minced
– Zest of 1 lemon
– Juice of 1 lemon
– 1 tablespoon fresh parsley, chopped
– Salt and pepper to taste
Instructions:
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Cut the pressed tofu into cubes or slices, depending on your preference.
3. In a bowl, mix together olive oil, soy sauce, garlic powder, dried basil, dried thyme, dried rosemary, salt, and pepper.
4. Toss the tofu in the herb mixture until evenly coated.
5. Place the tofu on the prepared baking sheet and bake for 25-30 minutes, flipping halfway through, until golden and crispy.
6. While the tofu is baking, prepare the lemon-garlic sauce. In a small saucepan, heat olive oil over medium heat.
7. Add minced garlic and cook until fragrant, about 1-2 minutes.
8. Stir in lemon zest, lemon juice, chopped parsley, salt, and pepper. Cook for another minute, then remove from heat.
9. Serve the herb-crusted tofu drizzled with the lemon-garlic sauce. Enjoy with your favorite side dishes or over a bed of greens.
