Ingredients

  • 500 g potatoes, peeled and diced
  • 1 can of tuna, drained
  • 1 onion, finely chopped
  • 1 carrot, grated
  • 2–3 green onion stalks, chopped
  • 1 egg
  • 100 g grated cheese (e.g., cheddar)
  • 4 tablespoons flour
  • Salt and pepper, to taste
  • Oil for frying

Instructions

  • Boil the diced potatoes in salted water until fork-tender. Drain well and mash until smooth.

  • In a large mixing bowl, combine mashed potatoes with tuna, chopped onion, grated carrot, green onions, egg, cheese, and flour. Season with salt and pepper.

  • Mix until a thick, uniform mixture forms. If too wet, add a little extra flour.

  • Heat oil in a skillet over medium heat. Scoop spoonfuls of the mixture, shape into patties, and place into the hot pan.

  • Cook for 3–4 minutes on each side, or until golden brown and crisp.

  • Transfer to a paper towel-lined plate to drain excess oil.

  • Serve warm with sour cream, Greek yogurt, or your favorite dipping sauce.

Tips & Variations

  • Swap tuna with cooked salmon or shredded chicken for a twist.
  • Add herbs like parsley or dill for extra freshness.
  • Air-fry or bake for a healthier version.

Storage

Store leftover fritters in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or air fryer to maintain crispiness.
