Ingredients

  • • 6 pork sausages (Irish-style or bratwurst)
  • • 1 tbsp olive oil
  • • 1 onion, sliced
  • • 3 cloves garlic, minced
  • • 3 carrots, cut into large chunks
  • • 3 cups green cabbage, chopped
  • • 3 cups beef or chicken broth
  • • ½ cup dark beer (optional, adds depth of flavor)
  • • 1 tbsp Worcestershire sauce
  • • ½ tsp salt
  • • ½ tsp black pepper
  • • ½ tsp dried thyme
  • • 2 bay leaves

Instructions

  • • In a large pot or Dutch oven, heat olive oil over medium heat. Brown the sausages on all sides, about 5–6 minutes. Remove and set aside.

  • • In the same pot, sauté the sliced onions for 2–3 minutes until soft. Add garlic and cook for another 30 seconds.

  • • Add carrots and chopped cabbage. Stir well and cook for 3–4 minutes to slightly soften.

  • • Pour in broth, dark beer (if using), and Worcestershire sauce. Season with salt, pepper, thyme, and add bay leaves.
