Lemon Garlic Butter Chicken
Ingredients :
For the Chicken:
2 large boneless, skinless chicken breasts (or 4 small ones)
Salt & black pepper, to taste
1 tsp garlic powder
½ tsp paprika
¼ cup all-purpose flour (for light dredging)
2 tbsp olive oil
2 tbsp butter
For the Sauce:
3 cloves garlic, minced
⅓ cup chicken broth
Juice of 1 lemon
Zest of ½ lemon
2 tbsp butter
1 tbsp fresh parsley, chopped
Instructions :
Prepare the chicken: Slice thick chicken breasts in half for even cooking. Season with salt, pepper, garlic powder, and paprika. Lightly coat with flour for a crispy texture.
Sear the chicken: Heat olive oil and butter in a skillet over medium-high heat. Add chicken and cook for about 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
Make the sauce: In the same pan, melt 2 tbsp butter and sauté the minced garlic until fragrant. Pour in chicken broth, lemon juice, and zest, scraping up browned bits from the pan. Let it simmer for 2 minutes.
Combine & serve: Return the chicken to the skillet, spooning the sauce over the top. Simmer for another minute to absorb the flavors.
Garnish & enjoy! Sprinkle fresh parsley over the chicken, serve with extra lemon wedges, and enjoy with rice, mashed potatoes, or a side of veggies.
