One-Pan Bold Honey BBQ Chicken Rice
Ingredients:
– 4 boneless, skinless chicken thighs
– 2 cups chicken broth
– 1/2 cup honey
– 1/4 cup BBQ sauce
– 1 tablespoon soy sauce
– 1 tablespoon olive oil
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon smoked paprika
– Salt and pepper to taste
– 1 cup frozen mixed vegetables (peas, carrots, corn)
– Fresh parsley for garnish
Instructions:
1. Prepare the Chicken:
– Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
2. Sear the Chicken:
– In a large skillet or pan, heat olive oil over medium-high heat.
– Add the seasoned chicken thighs and sear for about 5 minutes on each side until golden brown. Remove the chicken from the pan and set aside.
3. Make the Sauce:
– In the same pan, reduce the heat to medium and add honey, BBQ sauce, and soy sauce. Stir well to combine and let it simmer for about 2 minutes.
4. Cook the Rice:
– Add the rice to the pan and stir to coat it in the sauce.
– Pour in the chicken broth and bring to a boil.
5. Combine and Simmer:
– Return the seared chicken thighs to the pan, placing them on top of the rice.
– Cover the pan with a lid, reduce the heat to low, and let it simmer for about 20 minutes, or until the rice is cooked and has absorbed the liquid.
6. Add Vegetables:
– In the last 5 minutes of cooking, sprinkle the frozen mixed vegetables over the chicken and rice. Cover again and let them steam until heated through.
7. Serve:
– Fluff the rice with a fork, and serve the chicken on top of the rice. Garnish with fresh parsley if desired.
