Ingredients:
For the Pancakes:
3 1/2 tsp baking powder
1 tbsp sugar
1/4 tsp salt
1 1/4 cups milk
1 egg
3 tbsp melted butter
1 tsp vanilla extract
For the Pistachio Sauce:
1/2 cup shelled pistachios
1/4 cup milk (or cream for extra richness)
2 tbsp sugar
1/4 tsp vanilla extract
For the Toppings:
Maple syrup (to taste)
Whipped cream (store-bought or homemade)
Crushed pistachios (for garnish)
Steps:
Make the Pancakes:
In a bowl, whisk together flour, baking powder, sugar, and salt.
In another bowl, mix milk, egg, melted butter, and vanilla.
Combine wet and dry ingredients, stirring until just combined (a few lumps are okay!).
Heat a non-stick skillet over medium heat. Pour 1/4 cup batter for each pancake and cook until bubbles form on the surface. Flip and cook until golden brown.
Make the Pistachio Sauce:
Blend pistachios, milk, sugar, and vanilla in a food processor or blender until smooth. Add more milk if needed to reach a pourable consistency.
Assemble:
Stack the pancakes on a plate.
Drizzle generously with maple syrup and pistachio sauce.
Top with a dollop of whipped cream and a sprinkle of crushed pistachios.
