Ingredients:
For the ginger cookies:

2 1/4 cups all-purpose flour

1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ground cloves
1 tsp baking soda
1/4 tsp salt

3/4 cup unsalted butter, softened

1 cup granulated sugar (plus extra for rolling)
1/4 cup molasses
1 large egg

4 large scoops of vanilla ice cream

Instructions:

 Make the Ginger Cookies:

Preheat your oven to 350°F (175°C).
In a bowl, whisk together the flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt.
In a separate bowl, cream the butter and sugar until fluffy. Mix in the egg and molasses. Gradually combine with the dry ingredients.
Scoop dough into balls, roll in sugar, and place on a baking sheet. Bake for 10-12 minutes until edges are set but centers are soft. Let cool completely.
