Caramelized Mango Brown Sugar Cake
A rich, buttery brown sugar cake topped with luscious caramelized mangoes and a silky caramel drizzle—pure tropical decadence!
Ingredients:
For the Cake:
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 cup brown sugar
½ cup unsalted butter, softened
2 eggs
1 tsp vanilla extract
½ cup buttermilk
For the Caramelized Mango Topping:
1 ½ cups fresh mango, diced
½ cup brown sugar
¼ cup butter
¼ cup heavy cream
½ tsp vanilla extract
Instructions:
Prepare the Cake Batter:
Preheat oven to 350°F (175°C). Grease an 8-inch cake pan.
In a bowl, whisk together flour, baking powder, baking soda, and salt.
In a separate bowl, cream butter and brown sugar until fluffy. Add eggs and vanilla.
Gradually add dry ingredients, alternating with buttermilk.
Bake the Cake:
Pour batter into the prepared pan and bake for 30-35 minutes, until a toothpick comes out clean.
Let cool before adding the topping.
Caramelize the Mangoes:
In a saucepan, melt butter and brown sugar over medium heat. Stir in heavy cream and vanilla.
Add diced mangoes and simmer for 3-5 minutes until soft and coated in caramel.
Assemble & Serve:
Spoon the caramelized mangoes over the cooled cake.
Drizzle extra caramel sauce on top.
