Ingredients:
4 boneless, skinless chicken breasts
½ cup buffalo sauce (store-bought or homemade)
1 cup shredded mozzarella cheese
2 tbsp olive oil
Salt and pepper to taste
1 tsp garlic powder
1 tsp onion powder
Fresh parsley (optional, for garnish)
Ranch or blue cheese dressing (optional, for dipping)
Preparation:
Prepare the chicken: Use a sharp knife to cut a pocket in each chicken breast, being careful not to cut all the way through. Season the chicken with salt, pepper, garlic powder, and onion powder on both sides.
Stuff the chicken: Fill each chicken pocket with shredded mozzarella cheese. Secure the opening with toothpicks if necessary to keep the cheese inside while grilling.
