Ingredients:
– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1 cup unsalted butter, softened
– 1 1/2 cups granulated sugar
– 3 large eggs
– 1 teaspoon vanilla extract
– 1 cup buttermilk
– 1/2 cup sour cream
– 1/4 cup mayonnaise
– 1 cup shredded coconut
– 1 cup chopped pecans
– 1 (8 oz) can crushed pineapple, drained
– Cream cheese frosting
Instructions:
1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a medium bowl, sift together the flour, baking powder, baking soda, and salt.
3. In a large mixing bowl, cream the butter and sugar until light and fluffy.
4. Beat in the eggs, one at a time, then stir in the vanilla extract.
5. Combine the buttermilk, sour cream, and mayonnaise in a separate bowl.
6. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk mixture.
7. Fold in the shredded coconut, chopped pecans, and crushed pineapple.
8. Divide the batter evenly between the prepared cake pans.
9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
10. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
11. Once cooled, frost the cake with cream cheese frosting and decorate as desired.
