Caramel Pecan Cheesecake Bars

Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup melted butter
2 tablespoons sugar
For the Cheesecake Layer:
500g cream cheese, softened
1/2 cup sugar
2 large eggs
1 teaspoon vanilla extract
For the Topping:
1/2 cup caramel sauce
1/2 cup toasted pecans, chopped
Instructions:
Prepare the Crust: Preheat the oven to 175°C (350°F). Combine graham cracker crumbs, sugar, and melted butter. Press the mixture into an 8×8 baking dish and bake for 8-10 minutes. Let cool.
Make the Cheesecake Layer: Beat cream cheese, sugar, eggs, and vanilla until smooth. Pour over the cooled crust and bake at 160°C (325°F) for 30-35 minutes or until set. Cool completely.
Add the Topping: Once cooled, drizzle caramel sauce generously over the cheesecake layer and sprinkle with toasted pecans.
Chill and Serve: Refrigerate for at least 2 hours before slicing into squares. Serve with extra caramel drizzle for added decadence.
