Pineapple Coconut Ice Cream
Ingredients:
• 2 pounds fresh pineapple – diced
• 1 cup white sugar
• 1 pint half-and-half cream
• 1 14 oz. can sweetened condensed milk
• 1 12 fluid ounce can evaporated milk
• 1 teaspoon vanilla extract
• 2 cups whole milk, or as needed
Directions:
Mix pineapple with sugar and let it sit.
Combine all dairy ingredients and vanilla in a large bowl, then stir in the pineapple.
Pour into an ice cream maker and top with milk to the fill line.
Stir in shredded coconut for added texture.
Note:
For a tropical flair, top with toasted coconut flakes or a maraschino cherry.
