Pumpkin Spice Cornbread Bites
Warm, golden cornbread squares infused with pumpkin purée and cozy spices, finished with a sweet honey glaze.
Ingredients:
1 cup cornmeal
1 cup all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp ground cinnamon
½ tsp ground nutmeg
½ tsp ground ginger
1 cup pumpkin purée
½ cup buttermilk
2 eggs
¼ cup melted butter
3 tbsp honey
For the Glaze:
3 tbsp honey, warmed
1 tsp cinnamon
Instructions:
Prepare the Cornbread Batter:
Preheat your oven to 375°F (190°C) and grease an 8×8-inch baking dish or line it with parchment paper.
In a bowl, whisk together cornmeal, flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
In a separate bowl, combine pumpkin purée, buttermilk, eggs, melted butter, and honey. Gradually mix the wet ingredients into the dry ingredients until just combined.
Bake the Cornbread:
Pour the batter into the prepared dish and smooth the top. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Let it cool slightly.
Cut and Glaze:
Once cooled, cut the cornbread into small squares. Drizzle the warm honey glaze over each square and sprinkle with cinnamon for extra flavor.
