GRILLED CHICKEN AND MUSHROOM MELT SANDWICH
Ingredients:
2 boneless, skinless chicken breasts
1 cup mozzarella cheese, shredded
1 cup mushrooms, sliced
2 burger buns
2 tablespoons olive oil
Salt and pepper to taste
1 tablespoon butter
Fresh parsley for garnish
1 teaspoon garlic powder (optional)
Instructions:
Grill the chicken:
Season the chicken breasts with salt, pepper, and garlic powder. Heat a grill or grill pan with olive oil over medium-high heat. Grill the chicken for 5-6 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C). Let the chicken rest before slicing it thinly.
Sauté the mushrooms:
In a pan, melt the butter over medium heat. Add the sliced mushrooms and sauté for about 5 minutes, until they soften and turn golden brown. Season with salt and pepper to taste.
Assemble the sandwich:
Toast the buns lightly. On the bottom half of each bun, place the sliced grilled chicken. Add the sautéed mushrooms and top with a generous amount of mozzarella cheese.
Melt the cheese:
Place the assembled sandwiches under a broiler for 1-2 minutes or until the cheese is melted and bubbly.
Serve:
Garnish with freshly chopped parsley and serve immediately with your favorite side.
