Crunchy Coconut Chicken with Bang Bang Sauce
INGREDIENTS:
Irresistibly Crunchy Coconut Chicken with Zesty Bang Bang Sauce
– 1 lb chicken breasts, cut into strips
– 1 cup shredded coconut
– 1 cup panko breadcrumbs
– 2 eggs, beaten
– 1 cup flour
– Salt and pepper, to taste
– Oil, for frying.
*For the Bang Bang Sauce:*
– 1/2 cup mayonnaise
– 1/4 cup sweet chili sauce
– 1 tablespoon sriracha (adjust for spice preference)
– 1 tablespoon lime juice
INSTRUCTIONS:
1. Preheat oil in a frying pan over medium heat.
2. Season the chicken strips generously with salt and pepper.
3. Prepare a breading station: place flour in one dish, beaten eggs in another, and combine shredded coconut with panko in a third dish.
