Marry Me Chicken Soup
Ingredients
1 lb boneless, skinless chicken breasts
4 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup sun-dried tomatoes, chopped
3 cloves garlic, minced
1 small onion, diced
1 tsp dried thyme
1 tsp dried basil
Salt and pepper to taste
Fresh parsley for garnish
Directions
Heat olive oil in a large pot over medium heat. Add diced onion and garlic, and sauté until fragrant and translucent.
Add the chicken breasts and cook until browned on both sides.
Pour in chicken broth, bring to a boil, then reduce the heat. Simmer for 20 minutes until the chicken is cooked through.
Remove the chicken, shred it with two forks, and set aside.
Stir in heavy cream, Parmesan cheese, sun-dried tomatoes, thyme, and basil into the broth.
Return the shredded chicken to the pot and season with salt and pepper.
Let the soup simmer for 10 minutes to blend the flavors beautifully.
Garnish with fresh parsley and serve warm. Enjoy!
